Ingredients

1 clove garlic, crushed

1 fresh long red chilli, finely chopped

1/4 cup lime juice

1/4 cup fish sauce

1/4 cup grated palm sugar

1/2 cup water

1 medium carrot, coarsely grated

salt and pepper, to season

Directions

1 In a medium bowl, combine garlic, chilli, lime juice, fish sauce, palm sugar, water and carrot; season to taste.
